Vegan Peanut Butter, Chocolate, Avo and Banana Smoothie

Morning's are not our friend; when the alarm goes off at 6am, we hit snooze countless times before dragging ourselves out of bed.

In the usual morning rush we jump in the shower, get ready and pack lunch from last night's leftovers but don't ever seem to have a spare 5 minutes to make a proper breakfast that we are being told we need in order to start the day right.

A simple breakfast smoothie has been our savior over the last few years where we have been packing fruit, veg and heaps of protein into our breakfast in one simple whizz of the blender. Downing it, grabbing our bag's and running out the door - who has time for a proper sit down brekkie anymore?  

I have been changing and perfecting our smoothie recipes since we started making them a few years back. Evolving from a simple Banana and Blueberry mix up to this super yum Peanut Butter, Chocolate, Avocado and Banana Smoothie.

What I also love about this recipe is I usually have everything it needs in my pantry so it doesn't involve me buying an extra ingredients that sit in my cupboard for months.

The avocado really gives it more depth and creaminess to bulk it up a little and your get a nutty flavour that tastes so good! It actually keeps me from snacking till lunch which is why it is a winner.

This recipe is enough for 2 people so feed your flatmate or boyfriend or save it for tomorrow's super-fast breakfast you pull out of the fridge.

For all you fellow Vegans out there looking to increase your protein intake, each glass contains approx 10g protein to start your day right.

Vegan Peanut Butter, Chocolate, Avo and Banana Smoothie

Serves 2 / 5 - 10 mins Prep and Blend

Ingredients

  • 1 large ripe or frozen banana
  • 2 tbsp peanut butter
  • 1/2-  1 avocado fresh or frozen
  • 1-2 dates, pitted (soak in hot water for 5 mins to soften if hard)
  • 1 -2 tbsp Cacao Powder
  • 1..5 - 2 cups (360ml) soy milk (or any non dairy milk - almond, coconut, rice) ***
  • Optional - 1 tbsp chia seeds, hemp seeds or LSA

Toppings - optional but super yum!

  • Granola
  • Cacao nibs
  • Coconut flakes

Instructions

  1. Add dates and non dairy milk to blender and liquidize until broken down.
  2. Add remaining ingredients to blender and blend together until smooth.
  3. Taste and adjust to your liking; add another date for sweetness, extra water or milk if too thick or cacao for a more chocolaty flavour, until you are happy with the taste and consistency.
  4. Serve with added toppings I recommend or add your own.
  5. This recipe is enough for 2 people or store any leftovers in the fridge for 24 hours for tomorrow's brekkie!
